Instructions

  1. Sear Chicken: Dice the chicken breasts and heat olive oil in a large pot over medium-high heat. Add the chicken and cook until golden brown on all sides. Remove the chicken from the pot and set aside.
  2. Sauté Aromatics: In the same pot, add the diced onions, minced garlic, and diced bell pepper if using. Sauté until the vegetables are softened and fragrant, about 3-5 minutes.
  3. Cook Orzo: Stir in the orzo pasta to coat it with the vegetable mixture. Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.
  4. Make Alfredo Sauce: Remove the pot from heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and smooth.
  5. Combine & Serve: Fold the seared chicken back into the orzo mixture. Season with salt and pepper to taste. Garnish with fresh parsley if desired and serve immediately.
