  • ¼ teaspoon red chili flakes
  • 14 fl. oz (400 ml) tomato sauce (passata)
  • ½ cup (100 ml) heavy cream
  • 1 pack (16 oz / 450 g) fresh gnocchi
  • ⅓ cup (30 g) parmesan, grated
  • 68 fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Heat Olive Oil: Start by heating the olive oil in a large frying pan over medium heat.
  2. Sauté Onion: Add the finely diced medium onion to the pan and cook it for 3-5 minutes until it becomes translucent and soft.
  3. Cook Sausage: Add the Italian sausage (with casings removed) into the pan. Use a wooden spoon or spatula to break it apart. Continue cooking until the sausage is well-browned and fully cooked through.
  4. Add Garlic and Herbs: Stir in the finely chopped or minced garlic cloves, then add the dried oregano, dried basil, dried thyme, and red chili flakes. Sauté everything together for about a minute until the garlic becomes fragrant.
  5. Add Tomato Sauce: Pour the tomato sauce (passata) into the pan, stirring everything to combine. Bring the sauce to a gentle simmer.
  6. Simmer with Cream and Gnocchi: Lower the heat and stir in the heavy cream, then add the fresh gnocchi. Cover the pan and let it simmer for about 5 minutes, or until the gnocchi is cooked through and has absorbed some of the sauce.
  7. Finish and Serve: Stir in the grated parmesan and fresh basil leaves, then season everything to taste with salt and pepper. Serve immediately, optionally topped with extra parmesan and fresh basil.
