No-Bake Strawberry Cheesecake

A dreamy, creamy no-bake cheesecake with a buttery graham cracker crust, rich vanilla filling, and a generous topping of fresh strawberries and homemade strawberry glaze. A perfect make-ahead dessert for spring and summer gatherings.

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/3 cup (75g) melted butter
  • 2 tbsp sugar
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (100g) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 2 cups fresh strawberries, halved
  • 1/2 cup (120ml) water
  • 2 tbsp cornstarch
  • 1/4 cup (50g) sugar
  • 1 tsp lemon juice

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture firmly into the base of a springform pan. Chill in the refrigerator for 15 minutes.
  3. In a mixing bowl, beat cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice.
  4. In a separate bowl, whip heavy cream until soft peaks form.
  5. Fold the whipped cream into the cream cheese mixture until well combined.
  6. Pour the filling over the chilled crust and smooth the top. Refrigerate for at least 4 hours or overnight until set.
  7. For the topping, combine half of the strawberries, water, sugar, cornstarch, and lemon juice in a saucepan.
  8. Cook over medium heat for about 5–7 minutes until thickened and glossy. Let cool.
  9. Spoon the strawberry glaze over the set cheesecake and top with remaining fresh strawberries.
  10. Serve chilled and slice with a warm knife for clean cuts.

  • Ensure cream cheese is softened for a smooth filling.
  • Chilling overnight provides best results.
