Ingredients

Scale

Crust

  • 20 Oreo Cookies, crushed into crumbs
  • 6 tablespoons unsalted butter, melted

Gelatin Mixture

  • 4 envelopes unflavored gelatin (7 grams per envelope)
  • 2/3 cup cold water

Cheesecake Filling

  • 3 cups strawberries, cut into cubes (divided)
  • 24 oz cream cheese, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 1 1/2 cups white granulated sugar (divided)
  • 1 cup heavy whipping cream, cold (divided)
  • 1 teaspoon vanilla extract

Topping

  • Mini Oreos
  • Fresh strawberries
  • Strawberry topping (homemade from recipe or store-bought)

Instructions

  1. Prepare the crust: In a medium bowl, combine crushed Oreo crumbs with melted butter until thoroughly combined. Press this mixture firmly onto the bottom and sides of a 10-inch or 9×13-inch springform or cake pan, using a measuring cup to help press evenly. Refrigerate for 20 to 30 minutes to set.
  2. Make the gelatin mixture: Sprinkle gelatin over 1 cup of cold water in a small bowl and let it bloom for 1-2 minutes. Microwave for 30 seconds, then whisk until fully dissolved into a smooth gelatin mixture. Set aside.
  3. Puree the strawberries: Place 1 1/2 cups of strawberries into a food processor and blend until smooth. Set aside for later use.
  4. Mix the cream cheese: In a large bowl, using an electric mixer on medium to low speed, blend together cream cheese, mascarpone cheese, and 1 cup of sugar until smooth, stopping occasionally to scrape the sides to ensure even mixing. Avoid overmixing to prevent mascarpone separation.
  5. Whip the cream: In a chilled bowl, whip 1 cup of cold heavy cream, remaining 1/2 cup sugar, and vanilla extract on high speed until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula until fully incorporated.
  6. Combine strawberry puree with gelatin: Stir the strawberry puree into the gelatin mixture until combined.
  7. Mix gelatin-strawberry mixture into cheesecake batter: Add the strawberry gelatin blend to the cream cheese batter and mix thoroughly to combine all components.
  8. Fold in the cubed strawberries: Using a spatula, gently fold the remaining 1 1/2 cups of cubed strawberries into the batter, being careful to maintain texture.
  9. Assemble the cheesecake: Spread the cheesecake filling evenly over the chilled Oreo crust. Smooth the top with a spatula for an even surface.
  10. Refrigerate to set: Place the cheesecake in the refrigerator and chill for at least 6 hours, preferably overnight, to allow it to firm up properly.
  11. Prepare whipped cream topping: In a large bowl, whip the remaining cold heavy cream with 3 tablespoons sugar until stiff peaks form. Transfer to a piping bag fitted with a large star tip.
  12. Decorate the cheesecake: Remove the cheesecake from the springform pan carefully. Pipe the whipped cream on top decoratively, then garnish with fresh strawberries, mini Oreos, and strawberry topping as desired.
  13. Storage: Store the cheesecake refrigerated in an airtight container for up to 4 days to keep it fresh.

Notes

  • Use room temperature cream cheese and mascarpone for easier mixing and a smoother texture.
  • Blooming the gelatin properly ensures the cheesecake sets firmly without lumps.
  • Do not overwhip the mascarpone mixture to avoid separation.
  • The recipe can be made a day ahead for convenience and better flavor melding.
  • If you don’t have a food processor, use a blender or mash strawberries with a fork but puree will be less smooth.
  • For a more intense strawberry flavor, add a teaspoon of lemon juice to the strawberry puree.
