Strawberry Frosting

Instructions

  1. Prepare the baking dish: Line an 8×8-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges for easy removal later.
  2. Make the brownie base: In a large bowl, whisk together almond flour, oat flour, cocoa powder, and salt. Add in the sweetened condensed coconut milk, melted coconut oil, and vanilla extract. Mix thoroughly until combined. Transfer this dough mixture into the prepared baking dish and firmly press it down to create an even layer.
  3. Prepare strawberry frosting: In a large bowl, cream together the softened dairy-free butter and powdered sugar with an electric mixer until light and fluffy. Add the strawberry jam and continue to beat until fully incorporated and smooth. Spread the strawberry frosting evenly over the brownie base.
  4. Melt the chocolate topping: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval until completely melted and smooth. Pour the melted chocolate evenly over the strawberry frosting layer and spread to cover.
