No-Bake Chocolate Drizzled Granola Bars

Crunchy, chewy no-bake granola bars loaded with seeds, oats, and nut butter, finished with a dark chocolate dip and drizzle. A healthy yet indulgent snack perfect for lunchboxes or workouts.

  • 1 1/2 cups rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup chopped dried cranberries or raisins
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons flaxseed meal or chia seeds
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (melted, for dipping and drizzling)

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. In a large bowl, mix oats, seeds, dried fruit, flaxseed, cinnamon, and salt.
  3. In a small saucepan, heat almond butter and honey over low heat until smooth and warm.
  4. Pour the warm mixture over the dry ingredients and stir well to combine.
  5. Press the mixture firmly into the prepared pan, smoothing the top evenly.
  6. Refrigerate for 1–2 hours until firm.
  7. Once set, slice into bars. Dip the bottoms into melted chocolate and place on parchment.
  8. Drizzle remaining chocolate over the tops. Chill again for 15 minutes to set.
  9. Store in the fridge for up to a week in an airtight container.

Notes

  • You can substitute other nut butters such as cashew or sunflower seed butter.
  • Customize with other dried fruits or seeds for variety.
  • Bars hold better when kept refrigerated.
