- 1 1/2 cups rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup honey or maple syrup
- 1/4 cup chopped dried cranberries or raisins
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 2 tablespoons flaxseed meal or chia seeds
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (melted, for dipping and drizzling)
- Line an 8×8-inch pan with parchment paper.
- In a large bowl, mix oats, seeds, dried fruit, flaxseed, cinnamon, and salt.
- In a small saucepan, heat almond butter and honey over low heat until smooth and warm.
- Pour the warm mixture over the dry ingredients and stir well to combine.
- Press the mixture firmly into the prepared pan, smoothing the top evenly.
- Refrigerate for 1–2 hours until firm.
- Once set, slice into bars. Dip the bottoms into melted chocolate and place on parchment.
- Drizzle remaining chocolate over the tops. Chill again for 15 minutes to set.
- Store in the fridge for up to a week in an airtight container.
Notes
- You can substitute other nut butters such as cashew or sunflower seed butter.
- Customize with other dried fruits or seeds for variety.
- Bars hold better when kept refrigerated.
