Ingredients

Scale

Pastry

  • 10 4-inch puff pastry sheet squares

Filling

  • 8 oz mushrooms, sliced (any kind)
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/3 cup parsley leaves, roughly chopped
  • 2 tablespoons olive oil
  • 1/4 cup parmesan cheese
  • 4 oz goat cheese
  • 1/4 teaspoon sage
  • 1/4 teaspoon thyme
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup white wine (can substitute with chicken broth)

Finishing

  • 1 egg, whisked (for egg wash)

Instructions

  1. Preheat Oven and Prepare Puff Pastry: Preheat your oven to 400°F (200°C). Arrange the puff pastry squares evenly on two large baking pans, leaving 1-2 inches spacing between each, with no more than six squares per pan. Using a fork, gently prick small holes across the surface of each pastry square without puncturing all the way through.
  2. Sauté Aromatics and Mushrooms: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the finely chopped shallot and minced garlic and sauté for 1-2 minutes until fragrant. Add the sliced mushrooms, remaining 1 tablespoon of olive oil, sage, thyme, rosemary, salt, and pepper. Stir to combine and cook for an additional 2 minutes.
  3. Add Wine and Simmer: Pour in the white wine (or chicken broth) and cook for 4-5 minutes, allowing the liquid to reduce and flavors to concentrate. Once done, turn off the heat.
  4. Incorporate Cheeses and Herbs: Mix in the goat cheese, parmesan cheese, and chopped parsley until the goat cheese melts and the mixture thickens to a creamy consistency suitable for topping the pastries.
  5. Fill and Shape Tarts: Spoon generous amounts of the mushroom and cheese filling onto each puff pastry square. You may leave the edges open for a natural puff or pinch the sides to create decorative edges or boat shapes to your liking.
  6. Apply Egg Wash and Bake: Brush the whisked egg over the exposed puff pastry edges (avoiding the filling) to achieve a golden finish. Bake the tarts in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
  7. Serve and Enjoy: Remove from oven, allow tarts to cool slightly, and serve warm as an elegant appetizer or light meal.

Notes

  • Use good quality puff pastry for best results, either store-bought or homemade.
  • Mushroom varieties such as cremini, button, or shiitake work well.
  • If you don’t have white wine, chicken broth is a great substitute to add moisture and flavor.
  • Be careful not to puncture the puff pastry completely when pricking holes, as this helps prevent excessive puffing in some areas.
  • Pinching the sides of the pastry allows for creative presentation and helps contain the filling.
  • You can prepare the filling in advance and store it in the fridge until ready to assemble and bake.
  • Allow tarts to cool slightly after baking to let the filling set and avoid burns.
