Instructions

  1. Cook the ground beef: In a large deep skillet over medium-high heat, cook the lean ground beef until no longer pink, breaking it up with a wooden spoon. Drain any excess grease to reduce fat.
  2. Sauté vegetables: Add the diced onion, red bell pepper, and minced garlic to the skillet. Cook for 3-4 minutes until the vegetables soften. Stir in the taco seasoning mix to evenly coat the mixture.
  3. Add remaining ingredients: Mix in the uncooked long-grain white rice, drained black beans, frozen corn kernels, canned diced tomatoes with green chiles (with liquid), salsa, and low-sodium chicken broth. Stir thoroughly to combine all ingredients well and bring the mixture to a boil.
  4. Simmer the casserole: Once boiling, reduce the heat to low. Cover the skillet with a lid and simmer for 20-25 minutes, or until the rice is tender and the liquid is fully absorbed.
