Instructions

  1. Preheat the Oven: Set your oven to 300°F (150°C). Line cookie sheets with parchment paper or foil to ensure easy cleanup and to help the meringues bake evenly without sticking.
  2. Prepare the Egg Whites: In a clean, dry mixing bowl, combine the egg whites, cream of tartar, salt, and vanilla or almond extract. Using an electric mixer, beat the mixture until soft peaks form, which means the egg whites will be fluffy and slightly hold their shape.
  3. Incorporate the Sugar: Gradually add about half of the sugar to the egg whites while continuing to beat. Continue beating until stiff peaks form—meaning the mixture stands firm and glossy. Then add the remaining sugar all at once and gently fold it in at the lowest mixer speed for about 3-4 seconds to maintain the airy texture.
  4. Shape the Meringues: Using a pastry bag fitted with a 1/2-inch plain tip or any preferred tip—or a spoon if you don’t have a bag—pipe or spoon the meringue mixture into 1 1/2-inch mounds on the prepared cookie sheets, spacing them about 1 inch apart to allow for even baking.
  5. Bake and Cool: Place one baking sheet on top of the other to create a double-pan setup and bake the meringues for approximately 20 minutes. After baking, turn off the oven and slightly crack the door to allow the meringues to dry out inside for an additional 30 minutes. Once completely cooled, carefully remove the meringues from the parchment paper to enjoy or store.
