Ingredients

Scale

Meatloaf

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Mushroom Gravy

  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper to prevent sticking.
  2. Mix the Meatloaf: In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, and dried oregano. Season with salt and freshly ground black pepper. Use your hands to gently mix until just combined, taking care not to overmix to keep the meatloaf tender.
  3. Shape and Bake: Shape the meat mixture into a loaf shape and place it into the prepared dish. Bake in the preheated oven for 50-60 minutes or until an internal meat thermometer registers 160°F (71°C).
  4. Prepare the Gravy: While the meatloaf bakes, melt butter in a skillet over medium heat. Add sliced mushrooms and cook until they are golden brown and fragrant, about 5-7 minutes.
  5. Finish the Gravy: Sprinkle the flour over the cooked mushrooms and stir constantly for 2 minutes to make a roux. Gradually whisk in beef broth followed by the heavy cream. Continue stirring until the gravy thickens to a smooth, velvety consistency, about 5-7 minutes. Season with salt and freshly ground black pepper to taste.
  6. Serve: Remove the meatloaf from the oven and let it rest for a few minutes. Slice into thick portions and serve hot with the creamy mushroom gravy ladled over each serving.

Notes

  • Do not overmix the meatloaf ingredients to keep it moist and tender.
  • Using a meat thermometer ensures perfectly cooked meatloaf without drying out.
  • You can substitute fresh herbs for dried if desired, adjusting quantities accordingly.
  • For a lower-fat version, use lean ground beef or a mix of beef and ground turkey.
  • Leftover meatloaf is great for sandwiches or reheated with extra gravy.
