Matcha Chia Pudding Parfait with Kiwi and Granola

Ingredients

  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup chia seeds
  • 1 tbsp maple syrup (or honey)
  • 1 tsp matcha green tea powder
  • 1/2 tsp vanilla extract
  • 1/2 cup granola (store-bought or homemade)
  • 2 ripe kiwis, peeled and diced
  • Extra chia seeds (for topping, optional)

Instructions

  1. In a bowl or jar, whisk together almond milk, matcha powder, maple syrup, and vanilla extract until fully blended.
  2. Stir in chia seeds and let sit for 10 minutes. Stir again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight, until thick and creamy.
  4. To assemble, layer granola at the bottom of a glass or jar.
  5. Spoon in the matcha chia pudding, then top with diced kiwi and a sprinkle of chia seeds.
  6. Serve chilled and enjoy.
