Ingredients

Scale

Salmon and Seasoning

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Sauce

  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil (for garnish)

Instructions

  1. Prepare the Seasoning: In a small bowl, combine dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper thoroughly to create the seasoning mix.
  2. Season the Salmon: Take half of the seasoning mix and rub it evenly onto both sides of the salmon fillets to ensure the flavors penetrate the fish.
  3. Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Once hot, place the salmon fillets skin side down first and sear each side for about 5 minutes until a golden crust forms. Remove the salmon from the skillet and set it aside.
  4. Sauté Garlic and Sundried Tomatoes: Lower the heat to low and add minced garlic and chopped sundried tomatoes to the same skillet, optionally adding a splash of sundried tomato oil for extra flavor. Sauté gently for 1-2 minutes until aromatic.
  5. Deglaze the Pan: Pour in the chicken stock and scrape the bottom of the pan to lift any browned bits, intensifying the sauce flavor.
  6. Add Cream and Cheese: Stir in the heavy cream, freshly shredded parmesan, and the remaining seasoning mix, combining well to integrate all ingredients.
  7. Simmer the Sauce: Increase heat to medium-low and let the sauce simmer for 10-15 minutes, stirring occasionally until it has thickened to a creamy consistency. Adjust salt and pepper to taste.
  8. Finish Cooking the Salmon: Return the seared salmon to the skillet and spoon the thickened sauce over the fillets. Cook for an additional 3-5 minutes depending on your preferred doneness—3 minutes for medium, 5 minutes for well done.
  9. Serve: Plate the salmon and spoon any extra sauce over the top. Garnish with fresh basil leaves and enjoy immediately.

Notes

  • For best results, use fresh salmon fillets with the skin removed to ensure even cooking and better sauce coating.
  • You can add a splash of the sundried tomato oil when sautéing garlic and tomatoes for enhanced tomato flavor.
  • Adjust red pepper flakes based on your preferred spice level.
  • The sauce thickens as it simmers; if it becomes too thick, add a little extra chicken stock to loosen it.
  • Fresh basil garnish adds a bright, fresh aroma and flavor that complements the creamy sauce well.
