- For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
- For the Lime Buttercream:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- Green food coloring (optional)
- Toppings:
- Fresh blueberries
- Fresh blackberries
- Fresh mint or parsley leaves (for garnish)
- Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well, then mix in vanilla extract.
- Alternate adding dry ingredients and milk, starting and ending with the dry. Mix until just combined.
- Divide batter evenly among cupcake liners and bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the buttercream, beat butter until smooth. Gradually add powdered sugar, then mix in lime juice and zest. Add a few drops of green food coloring if desired.
- Pipe buttercream onto cooled cupcakes using a star tip.
- Garnish each cupcake with a few blueberries, a blackberry, and a mint or parsley leaf for a fresh finish.
Notes
- Make sure butter and eggs are at room temperature for best mixing results.
- You can substitute lemon juice and zest for a citrus variation.
- Refrigerate frosted cupcakes if not serving right away, but allow to come to room temperature before eating.
