Lemon Garlic Roasted Chicken Thighs & Drumsticks

Tender, juicy chicken thighs and drumsticks roasted in a zesty lemon garlic marinade, topped with caramelized lemon slices and fresh parsley. Perfect for a weeknight dinner or casual entertaining.

  • 4 chicken thighs (bone-in, skin-on)
  • 4 chicken drumsticks (bone-in, skin-on)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • 1 lemon, thinly sliced
  • 2 tbsp honey or maple syrup
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, garlic, lemon juice, honey, paprika, chili flakes (if using), salt, and pepper.
  3. Place chicken pieces in a large bowl or zip-top bag and pour the marinade over them. Let marinate for 20 minutes or overnight for more flavor.
  4. Arrange chicken in a large oven-safe skillet or baking dish. Pour remaining marinade over the top.
  5. Top each piece with a lemon slice.
  6. Roast for 35–40 minutes, basting occasionally with pan juices, until chicken is golden and fully cooked (internal temp 165°F / 74°C).
  7. Garnish with chopped parsley and serve warm.

Notes

  • Marinating overnight will enhance the flavor.
  • Use a meat thermometer to ensure the chicken reaches 165°F internally.
  • Maple syrup can be used as a substitute for honey for a different flavor profile.
