- 4 chicken thighs (bone-in, skin-on)
- 4 chicken drumsticks (bone-in, skin-on)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- Juice of 2 lemons
- 1 lemon, thinly sliced
- 2 tbsp honey or maple syrup
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional)
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped (for garnish)
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, garlic, lemon juice, honey, paprika, chili flakes (if using), salt, and pepper.
- Place chicken pieces in a large bowl or zip-top bag and pour the marinade over them. Let marinate for 20 minutes or overnight for more flavor.
- Arrange chicken in a large oven-safe skillet or baking dish. Pour remaining marinade over the top.
- Top each piece with a lemon slice.
- Roast for 35–40 minutes, basting occasionally with pan juices, until chicken is golden and fully cooked (internal temp 165°F / 74°C).
- Garnish with chopped parsley and serve warm.
Notes
- Marinating overnight will enhance the flavor.
- Use a meat thermometer to ensure the chicken reaches 165°F internally.
- Maple syrup can be used as a substitute for honey for a different flavor profile.
