Lemon Garlic Grilled Chicken Thighs

Juicy and flavorful grilled chicken thighs marinated in lemon juice, garlic, olive oil, and herbs. Slightly charred and caramelized, these chicken thighs are perfect for summer cookouts or a weeknight protein boost. Served with lemon wedges and fresh dill for brightness.

  • 6 boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional garnish: lemon slices, fresh dill sprigs

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, paprika, oregano, salt, and pepper.
  2. Add the chicken thighs to a large resealable bag or bowl and pour in the marinade. Toss to coat well.
  3. Marinate for at least 30 minutes (or up to 8 hours) in the refrigerator.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill the chicken thighs for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C) and there are visible grill marks.
  6. Remove from heat and rest for 5 minutes.
  7. Serve on a platter with lemon slices and a sprinkle of fresh dill.

Notes

  • For best flavor, marinate overnight.
  • Use bone-in thighs for even juicier results (adjust cook time).
  • Can be cooked on a stovetop grill pan if outdoor grill is unavailable.
  • Pair with rice, salad, or roasted vegetables for a complete meal.
