Lemon Garlic Butter Baked Cod

Delicate and flaky cod fillets baked in a zesty lemon garlic butter sauce with fresh thyme and a touch of heat. A simple, elegant seafood dish that’s quick enough for weeknights and impressive enough for guests.

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons unsalted butter, melted
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 lemon, thinly sliced
  • Fresh parsley or thyme sprigs for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, red pepper flakes (if using), thyme, salt, and black pepper.
  3. Place the cod fillets in a lightly greased baking dish in a single layer.
  4. Pour the lemon garlic butter sauce evenly over the fish.
  5. Top each fillet with lemon slices and a few sprigs of thyme (if using fresh).
  6. Bake for 15–17 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Remove from oven and spoon some of the sauce from the dish over the fish.
  8. Garnish with chopped parsley or fresh herbs and serve immediately.
  9. Pair with rice, roasted vegetables, or a fresh salad.

Notes

  • Cod can be substituted with haddock, halibut, or tilapia.
  • Reduce or omit red pepper flakes for a milder flavor.
  • Use parchment paper for easy cleanup and to retain moisture.
