  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Granola, for topping
  • Lemon slices and edible flowers, for garnish (optional)

Instructions

  1. In a medium bowl, combine the rolled oats, chia seeds, almond milk, Greek yogurt, maple syrup (if using), lemon juice, lemon zest, and vanilla extract.
  2. Stir well to combine, ensuring chia seeds are evenly distributed.
  3. Cover and refrigerate for at least 4 hours or overnight for the best texture.
  4. In the morning, give the oats a good stir. If too thick, add a splash of milk to loosen.
  5. Divide into serving glasses or jars, and top with granola, a lemon slice, and edible flowers if desired.
