Ingredients

Scale

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon

Wet Ingredients

  • 1 3/4 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Fruit

  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish to ensure the oatmeal does not stick during baking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, salt, lemon zest, and ground cinnamon. Stir these dry ingredients together to evenly distribute the flavors.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the milk, maple syrup or honey, egg, melted butter or coconut oil, vanilla extract, and lemon juice until well combined and smooth.
  4. Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients and stir until just combined, being careful not to overmix for best texture.
  5. Add Blueberries: Gently fold in the fresh or frozen blueberries, distributing them evenly throughout the batter without crushing the berries.
  6. Bake: Pour the combined mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 35–40 minutes, or until the top is golden and the center is set, indicating it is fully cooked.
  7. Cool and Serve: Remove from the oven and let the baked oatmeal cool for about 10 minutes before slicing into portions and serving warm.

Notes

  • You can substitute the milk with any dairy-free alternative such as almond, soy, or oat milk to make the recipe vegan if replacing the egg and butter accordingly.
  • For a vegan version, replace the egg with a flax egg and use coconut oil or vegan butter.
  • If using frozen blueberries, do not thaw before adding to prevent the mixture from turning purple.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and reheated in the microwave.
  • Add a handful of chopped nuts or seeds for extra crunch and nutrition.
