Soup Ingredients
- 1 tbsp olive oil
- 1 pound kielbasa, sliced
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 carrots, peeled and cut into half-moons
- 5 medium waxy potatoes, peeled and cut into bite-sized pieces
- 1 tsp sweet paprika
- 1 tsp dried marjoram
- 1 can (14 oz / 400 g) white beans, drained and rinsed
- 5 cups chicken broth
- ½ cup cream cheese, at room temperature
- ½ tsp black pepper
- 2 tbsp chopped dill
- Prepare Ingredients: Slice the kielbasa sausages, peel and cut the potatoes into bite-sized pieces. Peel and chop the carrots into half-moons. Dice the onion, mince the garlic cloves, and chop the fresh dill. Having everything ready makes the cooking process smooth.
- Brown Kielbasa: Heat the olive oil over medium heat in a large pot. Add the sliced kielbasa and brown it for about 5 minutes until it develops a nice color and releases its smoky flavor. Remove the browned kielbasa from the pot and set aside.
- Sauté Vegetables: In the same pot, add the diced onion, minced garlic, and carrot half-moons. Sauté the vegetables for 3 minutes until the onions become translucent and the garlic is fragrant.
- Add Potatoes and Spices: Stir in the bite-sized potatoes, drained white beans, sweet paprika, and dried marjoram. These ingredients bring texture and depth to the soup.
- Add Broth and Simmer: Pour in the chicken broth and cover the pot. Bring the soup to a boil, then reduce the heat to medium-low and let it simmer gently for 15 minutes until the potatoes are tender.
- Add Cream Cheese and Kielbasa: Remove the lid and stir in the cream cheese to add creaminess and richness to the broth. Return the browned kielbasa to the pot to warm through and meld the flavors.
- Season and Garnish: Taste the soup and adjust with salt if needed. Finish by adding black pepper and the chopped dill for a fresh, herbal aroma.
- Serve: Ladle the soup into bowls and enjoy the comforting, hearty flavors of this kielbasa potato soup.
Notes
- Use waxy potatoes such as Yukon Gold for best texture as they hold their shape well during cooking.
- For a spicier flavor, substitute the sweet paprika with smoked or hot paprika.
- You can swap the cream cheese for sour cream or Greek yogurt if preferred.
- This soup reheats well and tastes even better the next day as the flavors deepen.
- For a vegetarian version, omit the kielbasa and use vegetable broth instead.
