Ingredients

Scale

Chicken Mixture

  • 2 cups cooked chicken, shredded or diced
  • 8 ounces mushrooms, sliced (button or cremini)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Cheese Topping

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure even baking and a nicely browned top.
  2. Sauté Mushrooms: Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until golden brown and their moisture has evaporated.
  3. Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed mushrooms and garlic, heavy cream, dried thyme, dried oregano, salt, and pepper. Mix thoroughly until well incorporated.
  5. Assemble Casserole: Transfer the mixture to a greased 9×13-inch casserole dish and spread evenly.
  6. Add Cheese: Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top of the chicken mixture.
  7. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with freshly chopped parsley and serve warm.

Notes

  • Use cooked chicken from rotisserie, grilled, or boiled as preferred for convenience.
  • You can substitute heavy cream with full-fat coconut cream for a dairy-free version.
  • Make sure to sauté mushrooms properly to avoid a soggy casserole.
  • For added flavor, sprinkle some red pepper flakes before baking if you like some heat.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely in the oven or microwave.
