Ingredients

Scale

Base and Topping

  • 10 tablespoons (141g) unsalted butter, melted and cooled slightly
  • ½ cup (110g) light brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 1¼ cups (157g) all purpose flour
  • 1 cup (90g) old fashioned oats
  • ¼ teaspoon salt
  • ½ teaspoon baking soda

Filling

  • Generous ¾ cup (250g) jam or preserves (any flavor)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with foil or parchment paper, leaving an overhang on two sides for easy removal. Lightly spray the lining with nonstick spray.
  2. Mix Wet Ingredients: In a large bowl, whisk together the melted butter, packed light brown sugar, and pure vanilla extract until well combined, about a full minute to achieve a smooth texture.
  3. Add Dry Ingredients: Sprinkle the all-purpose flour over the butter mixture, then add the old fashioned oats, salt, and baking soda. Stir gently using a rubber spatula or wooden spoon until the dough is fully combined and slightly sticky.
  4. Divide Dough: Take about ¾ cup (a little less than half) of the cookie dough and place it into the refrigerator to chill; this will be used for the topping. Press the remaining dough evenly into the prepared pan, forming a compact, buttery base layer.
  5. Bake Base Layer: Bake the base layer in the preheated oven for 10 minutes until it is set but not browned.
  6. Add Jam and Topping: Remove the pan from the oven and carefully spread the jam evenly over the warm base. Remove the chilled dough from the refrigerator and crumble it evenly over the jam layer as a topping.
  7. Final Bake: Return the pan to the oven and bake for an additional 15-18 minutes until the topping is light golden brown. The bars might look slightly wobbly but will firm up as they cool.
  8. Cool and Serve: Place the pan on a wire rack to cool completely. The bars are soft at room temperature; refrigerate to make them firmer and more sturdy for slicing.

Notes

  • Use soft, fresh light brown sugar for the best texture.
  • Any flavor of jam or preserves works well—choose your favorite!
  • Make sure to cool bars completely before slicing to maintain their shape; refrigeration helps them firm up.
  • Line the pan with foil or parchment for easy removal.
  • If you prefer a crunchier texture, bake a couple of minutes longer but watch carefully to avoid burning.
