Chicken and Seasoning

  • 2 lbs. chicken tenders (boneless chicken breasts and thighs work too)
  • 45 tablespoons oil for marinade and cooking chicken
  • 2 tablespoons smoked paprika (or regular paprika)
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Sliders and Toppings

  • 1 pack Hawaiian slider buns or dinner rolls
  • Mayonnaise, to taste
  • Sweet Baby Ray’s Golden Mustard (honey mustard works as a substitute)
  • 8 strips bacon, cooked crisp
  • Colby Jack cheese slices (enough for the sandwiches)
  • 1/2 head lettuce
  • 1/2 small red onion, sliced thin
  • 2 Roma tomatoes, sliced thin

Butter Topping

  • 1/2 stick butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced

Instructions

  1. Season Chicken: Place chicken tenders into a large zip-top bag or bowl. Add several tablespoons of blackened seasoning (combine smoked paprika, cayenne pepper, onion powder, garlic powder, black pepper, salt, dried thyme, dried oregano) and a few tablespoons of oil. Mix thoroughly to coat the chicken evenly on all sides.
  2. Cook Chicken: Heat an oiled skillet over medium-high heat or preheat grill. Cook the chicken tenders about 3 minutes per side, flipping just once, until cooked through and nicely seared.
  3. Prepare Butter Topping: Combine softened butter, chopped parsley, and minced garlic in a small bowl. Microwave for 30 seconds or until the butter melts, then stir to combine well.
  4. Toast Buns: Slice the slider buns horizontally if needed. Place the bottom halves cut side up on a baking sheet. Place under a broiler until golden brown, which takes just a few minutes. Flip the top halves so the domed side faces up and place them next to the bottom buns on the pan.
  5. Assemble Sliders: Spread mayonnaise on the bottom buns. Add cooked chicken evenly so each slider has at least one tender. Add a dollop of golden honey mustard, then place a slice of Colby Jack cheese over the chicken.
  6. Broil to Melt Cheese: Spread the prepared butter mixture on the top buns. Return the baking sheet to the broiler for 1-2 minutes until the cheese softens and the top buns toast slightly.
  7. Add Fresh Toppings and Serve: Remove the sliders from the broiler. Top with tomatoes, red onion slices, lettuce, and another drizzle of honey mustard on the toppings. Place the top buns over the sandwiches, slice to separate, and serve immediately.

  • You can substitute chicken breasts or thighs for tenders if preferred, but adjust cooking time accordingly.
  • Adjust the cayenne pepper according to your desired spice level.
  • For extra smoky flavor, use smoked paprika as recommended.
  • To save time, bacon can be cooked ahead and stored in the refrigerator until assembling.
  • Use a serrated knife for slicing slider buns to prevent squashing them.
