Honey Garlic Grilled Chicken Skewers

Tender chunks of chicken marinated in a flavorful honey garlic sauce, then grilled to smoky, caramelized perfection. These skewers are a perfect blend of sweet, savory, and a hint of spice—ideal for BBQs, weeknight dinners, or sharing platters.

Ingredients

  • 1.5 lbs boneless skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar or lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili flakes (optional)
  • Wooden or metal skewers
  • Chopped cilantro or parsley for garnish

Instructions

  1. In a large bowl, whisk together soy sauce, honey, olive oil, vinegar or lemon juice, garlic, ginger, pepper, and chili flakes.
  2. Add chicken chunks to the marinade and toss to coat well. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers.
  5. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  6. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.
  7. Remove from the grill and garnish with chopped cilantro or parsley.
  8. Serve hot with rice, salad, or grilled vegetables.

Notes

  • Chicken thighs are juicier and more forgiving on the grill than breasts.
  • Reserve some marinade (before adding raw chicken) to brush on while grilling for extra flavor.
  • Pairs wonderfully with coconut rice or a crisp cucumber salad.
