  • 1 large apple, peeled and chopped
  • 3 Tbsp honey (or 34 Tbsp dark brown sugar as alternative)
  • 1 tsp vanilla extract
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s ready when the batter is prepared.
  2. Prepare Batter: Place all ingredients except for 1/4 of the oats into a blender or bowl to use a hand blender. Blend or process until the mixture is smooth. Then fold in the remaining 1/4 cup of oats gently to add texture.
  3. Prepare Baking Pan: Line a smaller-sized baking pan with parchment paper to prevent sticking and make removal easier.
  4. Bake: Pour the batter into the prepared pan and bake for 20 to 30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean when the cake is ready.
  5. Cool and Store: Let the cake cool completely after baking. Slice and store the pieces in an airtight container in the refrigerator for at least an hour. The cake’s flavor and texture improve as it cools. Enjoy warm or chilled for breakfast or dessert.

  • If honey or maple syrup is unavailable, substitute with 3-4 tablespoons of dark brown sugar; adjust sweetness by tasting the batter before baking.
