- 12 large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- Salt and pepper, to taste
- 2 ripe avocados
- 1 tbsp lime juice
- 1 small garlic clove, minced
- 1 tbsp red onion, finely chopped
- 1 tbsp fresh cilantro, chopped (plus more for garnish)
- In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Heat a skillet or grill pan over medium-high heat. Cook shrimp for 2–3 minutes per side or until pink and opaque. Set aside.
- In a separate bowl, mash avocados with lime juice, minced garlic, red onion, and chopped cilantro. Season to taste with salt.
- Spoon about 1 tablespoon of guacamole into each mini tortilla cup.
- Top each cup with one grilled shrimp and garnish with a small cilantro leaf.
