Guacamole Shrimp Bites in Mini Tortilla Cups

  • 12 mini tortilla cups (store-bought or homemade)
  • 12 large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • Salt and pepper, to taste
  • 2 ripe avocados
  • 1 tbsp lime juice
  • 1 small garlic clove, minced
  • 1 tbsp red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped (plus more for garnish)

Instructions

  1. In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
  2. Heat a skillet or grill pan over medium-high heat. Cook shrimp for 2–3 minutes per side or until pink and opaque. Set aside.
  3. In a separate bowl, mash avocados with lime juice, minced garlic, red onion, and chopped cilantro. Season to taste with salt.
  4. Spoon about 1 tablespoon of guacamole into each mini tortilla cup.
  5. Top each cup with one grilled shrimp and garnish with a small cilantro leaf.
  6. Serve immediately for best crunch and flavor.

Notes

  • Prepare tortilla cups ahead of time and store in an airtight container.
  • Shrimp can be grilled in advance and served chilled or at room temperature.
  • For a spicier kick, add a dash of hot sauce or chopped jalapeños to the guacamole.
