Ingredients

Scale

Main Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and grease a large baking dish with olive oil to prevent sticking and ensure even cooking.
  2. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking for 3-4 minutes until the onion becomes translucent and fragrant.
  3. Cook the Ground Turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes until browned throughout. Drain any excess fat to keep the dish lean.
  4. Add the Sweet Potatoes & Zucchini: Stir in diced sweet potatoes, zucchinis, smoked paprika, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables start to soften.
  5. Transfer to Baking Dish: Move the cooked mixture into the prepared baking dish and spread evenly.
  6. Top with Cheese: Sprinkle the shredded cheese evenly over the turkey and vegetable mixture.
  7. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.
  8. Garnish & Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley if desired and serve warm.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • Use your favorite cheese; mozzarella offers a mild flavor, while cheddar adds a sharper taste.
  • For added heat, sprinkle red pepper flakes into the mixture before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • To make this dish gluten-free, ensure the seasoning used does not contain gluten-based additives.
