Instructions

  1. Cook the Beef: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 lb of lean ground beef and season with half of the cumin, paprika, thyme, garlic powder, salt, and black pepper. Cook until the beef is browned, breaking it apart continuously to ensure even cooking. Once browned, transfer the beef to a plate and set aside.
  2. Cook the Potatoes: In the same skillet, add the peeled and cubed Yukon gold potatoes. Season with the remaining half of the spices. Pour in 1 cup of beef stock or water, then cover the skillet. Cook the potatoes for 8–10 minutes, stirring occasionally, until they become tender and most of the liquid has evaporated.
  3. Sauté Vegetables: Add the diced yellow onion and red bell pepper to the skillet with the potatoes. Sauté together until the vegetables soften and become fragrant.
  4. Combine and Finish: Return the cooked ground beef to the skillet with the vegetables and potatoes. Stir in 2 tablespoons of Worcestershire sauce and 1 teaspoon of Dijon mustard, mixing well to combine all flavors. Taste and adjust seasoning if necessary.
