Juicy grilled peaches paired with creamy burrata, fresh basil ribbons, and a drizzle of olive oil—this vibrant summer salad is sweet, savory, and luxuriously simple with every bite.

Ingredients

Scale
  • 3 ripe peaches, halved and pitted
  • 1 tablespoon olive oil (for grilling)
  • 8 oz burrata cheese
  • 2 tablespoons extra virgin olive oil (for drizzling)
  • 1 tablespoon honey or balsamic glaze (optional)
  • 1 tablespoon fresh basil, chiffonade (thin ribbons)
  • Freshly ground black pepper, to taste
  • Flaky sea salt, to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Brush peach halves lightly with olive oil.
  2. Grill peaches cut-side down for 2–3 minutes until char marks appear. Slice into wedges once slightly cooled.
  3. Arrange grilled peach slices in a shallow bowl or plate.
  4. Tear burrata into chunks and gently scatter over the peaches.
  5. Drizzle with extra virgin olive oil and a touch of honey or balsamic glaze if using.
  6. Sprinkle with flaky sea salt, freshly ground black pepper, and top with basil ribbons.
  7. Serve immediately as a refreshing appetizer or side.

Notes

  • Use slightly firm peaches for easier grilling and better texture.
  • Try adding toasted pine nuts or prosciutto for extra flavor layers.
  • Serve with crusty bread to soak up the juices and cheese.
