Grilled Lamb Skewers Mezze Platter

  • For the Lamb Skewers:
  • 1.5 lbs lamb leg or shoulder, cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Wooden or metal skewers (if wooden, soak in water 30 mins)
  • For the Mezze Platter:
  • 1 cup hummus
  • 1 cup baba ghanoush or extra hummus
  • 1 cup tabbouleh
  • 1/2 cup tomato salad (diced tomatoes, olive oil, parsley, lemon juice)
  • 46 pita breads, quartered and lightly toasted
  • Olive oil for drizzling
  • Paprika or sumac for garnish

Instructions

  1. In a large bowl, combine olive oil, garlic, cumin, paprika, coriander, lemon juice, salt, and pepper. Add lamb cubes and marinate for at least 1 hour (up to overnight in the fridge).
  2. Thread the marinated lamb onto skewers.
  3. Preheat a grill or grill pan to medium-high heat. Grill skewers for 8–10 minutes, turning occasionally, until nicely charred and cooked to your preferred doneness.
  4. Warm the pita bread on the grill or in a skillet.
  5. Assemble the platter: place grilled skewers at the center of a large wooden board, surround with hummus, baba ghanoush, tabbouleh, tomato salad, and warm pita.
  6. Drizzle hummus with olive oil and a pinch of paprika or sumac before serving.
  7. Serve immediately and enjoy warm.
