- For the Lamb Skewers:
- 1.5 lbs lamb leg or shoulder, cut into 1.5-inch cubes
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- Juice of 1 lemon
- Salt and black pepper to taste
- Wooden or metal skewers (if wooden, soak in water 30 mins)
- For the Mezze Platter:
- 1 cup hummus
- 1 cup baba ghanoush or extra hummus
- 1 cup tabbouleh
- 1/2 cup tomato salad (diced tomatoes, olive oil, parsley, lemon juice)
- 4–6 pita breads, quartered and lightly toasted
- Olive oil for drizzling
- Paprika or sumac for garnish
- In a large bowl, combine olive oil, garlic, cumin, paprika, coriander, lemon juice, salt, and pepper. Add lamb cubes and marinate for at least 1 hour (up to overnight in the fridge).
- Thread the marinated lamb onto skewers.
- Preheat a grill or grill pan to medium-high heat. Grill skewers for 8–10 minutes, turning occasionally, until nicely charred and cooked to your preferred doneness.
- Warm the pita bread on the grill or in a skillet.
- Assemble the platter: place grilled skewers at the center of a large wooden board, surround with hummus, baba ghanoush, tabbouleh, tomato salad, and warm pita.
- Drizzle hummus with olive oil and a pinch of paprika or sumac before serving.
- Serve immediately and enjoy warm.
