Grilled Honey Garlic Carrots

Tender carrots char-grilled to smoky perfection, glazed in a sweet and savory honey garlic marinade. These caramelized beauties are the perfect veggie side with bold flavor and irresistible char marks.

Ingredients

  • 2 lbs carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, honey, soy sauce, garlic, smoked paprika, salt, and pepper.
  3. Place the carrots in a large bowl and pour the marinade over them. Toss well to coat evenly.
  4. Arrange the carrots on the grill (or a grill pan) and cook for 15–20 minutes, turning occasionally, until tender and nicely charred.
  5. Transfer to a serving plate and sprinkle with fresh parsley. Serve warm.

Notes

  • Use rainbow carrots for added color and visual appeal.
  • Can be roasted in the oven at 425°F for a similar effect.
  • Add a squeeze of lemon juice for a bright finish.
