Grilled Halloumi Skewers with Herbs & Lemon

Golden-brown grilled halloumi cheese skewers seasoned with fresh thyme and a touch of lemon. Crispy on the outside and soft on the inside, these skewers are a protein-rich, flavorful vegetarian appetizer or side dish.

Ingredients

  • 8 oz halloumi cheese, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1/4 tsp smoked paprika (optional)
  • Freshly cracked black pepper, to taste
  • Lemon wedges (for serving)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for 15 minutes to prevent burning.
  2. In a bowl, gently toss halloumi cubes with olive oil, thyme, paprika (if using), and black pepper.
  3. Thread the halloumi cubes onto skewers, spacing them slightly apart.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the skewers for 2–3 minutes per side, until golden brown and lightly charred.
  6. Serve immediately with fresh lemon wedges and garnish with additional thyme if desired.

Notes

  • Use a grill pan if an outdoor grill is not available.
  • Halloumi holds its shape well on the grill and doesn’t melt, making it ideal for skewers.
  • Serve with a side salad or warm flatbread for a complete meal.
