Grilled Chicken with Sweet Potato Fries & Fresh Guacamole

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 medium sweet potatoes, cut into fries
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/4 tsp chili powder

  • 1 ripe avocado, diced
  • 1/4 small red onion, finely chopped
  • 1/4 cup cherry tomatoes, diced
  • 1 tsp lime juice
  • Salt to taste
  • 1/2 cup cherry tomatoes, halved
  • Fresh chopped cilantro (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato fries with olive oil, paprika, chili powder, salt, and pepper.
  2. Spread the fries on a baking sheet and roast for 25–30 minutes, flipping halfway through.
  3. While the fries are roasting, coat chicken breasts in olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side, or until fully cooked. Slice into strips.
  5. In a small bowl, mix avocado, red onion, diced tomatoes, lime juice, and salt to make guacamole.
  6. Plate the grilled chicken with sweet potato fries, a scoop of guacamole, and cherry tomato halves.
  7. Garnish with fresh chopped cilantro if desired and serve immediately.

Notes

  • Use a meat thermometer to ensure chicken is cooked to 165°F (74°C).
  • Swap sweet potatoes with regular potatoes if preferred.
  • Guacamole is best made fresh just before serving.
