Grilled BBQ Chicken Melt Sandwich

This hearty grilled sandwich features tender shredded BBQ chicken, melted cheddar cheese, crisp lettuce, juicy tomatoes, and smoky grilled bread. A satisfying and savory melt perfect for lunch, dinner, or anytime comfort food cravings strike.

  • 2 slices sourdough or sandwich bread
  • 1/2 cup shredded cooked chicken
  • 2 tablespoons BBQ sauce
  • 2 slices sharp cheddar cheese
  • 2 slices tomato
  • Handful of fresh lettuce
  • 1 tablespoon butter (for grilling)

Instructions

  1. In a small bowl, toss shredded chicken with BBQ sauce until fully coated.
  2. Lay one slice of bread on a cutting board. Add one slice of cheddar cheese, then layer on the BBQ chicken, tomato slices, lettuce, and the second slice of cheddar cheese.
  3. Top with the second slice of bread to form the sandwich.
  4. Butter the outside of both slices of bread evenly.
  5. Heat a skillet or grill pan over medium heat.
  6. Place the sandwich in the pan and grill for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted.
  7. Remove from the skillet, slice in half, and serve warm.

Notes

  • Use rotisserie chicken for a quick and easy option.
  • Add red onion or pickles for extra flavor.
  • Swap cheddar for another melty cheese like mozzarella or pepper jack.
