Goat Cheese Stuffed Dates with Almonds

Sweet Medjool dates filled with tangy goat cheese, topped with crunchy almonds and a sprig of fresh thyme—these elegant bites are the perfect blend of creamy, chewy, and nutty for any gathering or quick snack.

  • 20 Medjool dates, pitted
  • 5 oz goat cheese, softened
  • 20 whole almonds (roasted or raw)
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Slice each date lengthwise to create an opening, being careful not to cut all the way through.
  2. Using a small spoon or piping bag, fill each date with about 1 teaspoon of goat cheese.
  3. Press one whole almond gently into the center of each filled date.
  4. Optional: Drizzle lightly with honey for added sweetness.
  5. Garnish with a tiny sprig of fresh thyme on top.
  6. Arrange on a serving platter or parchment-lined tray. Serve immediately or refrigerate until ready to serve.

Notes

  • Use flavored goat cheese (herbs or honey) for a twist.
  • These can be made a few hours ahead and stored in the fridge.
