Apples
- 2 red/pink apples (Honeycrisp or Pink Lady preferred, but any red baking apple works)
- 4 tablespoons sugar (divided)
Pastry
- 1 sheet puff pastry (half of a 17.25-ounce package, such as Pepperidge Farm)
- 1 tablespoon all-purpose flour (for dusting the counter)
- 1 teaspoon ground cinnamon
- 1 tablespoon pure maple syrup
- Thaw and prepare muffin tin: Thaw the puff pastry at room temperature for 30 minutes, then refrigerate until ready to use. Spray a 6-cup muffin tin with non-stick spray and set aside.
- Slice and sugar apples: Cut apples in half, remove cores, and slice very thinly with peels on to preserve color. Place slices in a microwave-safe bowl and sprinkle with 2 tablespoons sugar. Gently toss to coat.
- Microwave and drain apples: Microwave apples on high for 90 seconds, then let sit for 10 minutes. Transfer to a strainer set over a bowl to drain for 10 minutes, reserving the juice in the bowl.
- Roll and cut puff pastry: Remove puff pastry from fridge and place on lightly floured surface. Roll into a 12 x 9-inch rectangle and cut into 6 strips roughly 2 x 9 inches each.
- Make cinnamon sugar and sprinkle pastry: Combine remaining 2 tablespoons sugar with cinnamon. Sprinkle each strip with about a teaspoon of the mixture.
- Arrange apples on pastry strips: Lay apple slices along the top edge of each pastry strip, overlapping slightly with red skin hanging over the edge.
- Fold and roll the roses: Fold up the bottom dough edges over the apples, then carefully roll each strip starting from one end like a snail. Seal edges and place each rose into a prepared muffin cup.
- Chill roses and preheat oven: Refrigerate the muffin tin with the roses while preheating the oven to 375°F (190°C).
- Bake roses: Bake for 40 minutes until light golden. Optionally cover with foil after 25–30 minutes if apples brown too fast. Remove, brush with syrup, and bake another 5–10 minutes until golden and glazed.
- Prepare maple syrup glaze: Mix maple syrup with reserved apple juice, microwave for 90 seconds, then brush over baked roses for shine and extra sweetness.
Notes
- Using red-skinned apples is key to achieving the beautiful rose color effect.
- Thinly slicing apples is important so they are pliable for rolling and bake evenly.
- Chilling the formed roses before baking helps them keep shape during baking.
- Monitor apple color while baking, cover with foil if they brown too quickly.
- Reserved apple juice mixed with maple syrup creates a flavorful glaze that complements the sweetness and adds shine.
- Use parchment paper or non-stick spray to prevent sticking in muffin tin.
