Garlic Herb Grilled Chicken Skewers

Juicy, tender chunks of chicken marinated in garlic, lemon, and herbs, then grilled to smoky perfection. These skewers are simple yet flavorful, perfect for summer cookouts, weeknight meals, or protein-packed meal prep.

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Metal or soaked wooden skewers

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice and zest, rosemary, thyme, oregano, paprika, salt, and pepper.
  2. Add chicken pieces to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
  3. Preheat grill to medium-high heat and lightly oil the grates.
  4. Thread marinated chicken onto skewers evenly.
  5. Grill for 10–12 minutes, turning occasionally, until chicken is fully cooked and charred in spots.
  6. Transfer to a plate, garnish with extra herbs if desired, and serve hot.

Notes

  • Use chicken thighs for a juicier result, though breasts also work well.
  • Serve with a side of rice, salad, or in pita with tzatziki.
  • Can be cooked on a stovetop grill pan if outdoor grill is unavailable.
