Garlic Herb Chicken with Mashed Potatoes & Green Beans

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme

  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)
  • For the Gravy:
  • 1 tbsp butter
  • 1 tbsp all-purpose flour (or gluten-free blend)
  • 1 cup low-sodium chicken broth
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • For the Mashed Potatoes:
  • 3 medium russet potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk (or dairy-free alternative)
  • Salt and pepper, to taste
  • For the Green Beans:
  • 2 cups green beans, trimmed
  • Salt, to taste

Instructions

  1. Prepare Mashed Potatoes: Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain, then mash with butter, milk, salt, and pepper until creamy. Set aside.
  2. Steam Green Beans: In a saucepan, steam green beans with a pinch of salt for 4–5 minutes until tender-crisp. Drain and set aside.
  3. Cook Chicken: Season chicken breasts with garlic powder, onion powder, thyme, paprika, salt, and pepper. Heat olive oil and butter in a skillet over medium heat. Cook chicken 5–6 minutes per side, until golden and cooked through. Remove and keep warm.
  4. Make Gravy: In the same skillet, melt 1 tbsp butter. Whisk in flour and cook for 1 minute. Slowly whisk in broth and garlic powder. Simmer until thickened (2–3 minutes). Season with salt and pepper.
  5. Assemble: Plate mashed potatoes, green beans, and chicken breast. Spoon gravy over chicken and potatoes. Garnish with fresh parsley and serve warm.

  • Use bone-in chicken thighs for extra flavor if preferred.
  • For dairy-free, substitute butter and milk with plant-based alternatives.
