Chicken and Herb Mixture
- 4 chicken breasts
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Vegetables
- 2 cups baby carrots
- Fresh parsley for garnish
- Preheat the oven. Set your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the chicken and carrots evenly.
- Prepare the garlic herb mixture. In a medium bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well to create a flavorful marinade for the chicken.
- Coat the chicken breasts. Place the chicken breasts in a baking dish and generously coat each piece with the garlic herb mixture, making sure every side is covered for maximum flavor.
- Add the carrots. Arrange the baby carrots around the chicken breasts in the baking dish so they can roast simultaneously, absorbing some of the herb flavors.
- Bake the dish. Place the baking dish into the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the carrots are tender when pierced with a fork.
- Garnish and serve. Remove from the oven and sprinkle fresh parsley on top for a burst of color and fresh flavor before serving.
Notes
- Using fresh herbs instead of dried can enhance the flavor if available.
- Check chicken doneness with a meat thermometer to avoid under or overcooking.
- You can substitute baby carrots with sliced regular carrots if needed.
- For a richer flavor, marinate the chicken in the herb mixture for 30 minutes before baking.
