Ingredients

Scale

Chicken and Seasoning

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper to taste
  • 1 tsp dried Italian herbs
  • 2 tbsp olive oil

Sauce and Gnocchi

  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Garnish

  • Fresh basil leaves for garnish

Instructions

  1. Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt, pepper, and dried Italian herbs. Cook until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, making sure not to burn it.
  3. Deglaze Skillet: Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet to incorporate flavor.
  4. Add Gnocchi: Add the potato gnocchi to the skillet and bring the mixture to a simmer. Cook for 3-4 minutes, stirring occasionally until the gnocchi starts to become tender.
  5. Simmer with Cream: Reduce heat to medium-low, pour in the heavy cream, and stir gently to combine. Let it simmer for another 2-3 minutes until the sauce thickens slightly.
  6. Combine and Finish: Return the cooked chicken to the skillet along with the grated Parmesan cheese. Stir well until the cheese melts and the chicken is reheated through.
  7. Adjust Seasoning and Serve: Taste the dish and adjust seasoning with additional salt and pepper if desired. Garnish with fresh basil leaves before serving.

Notes

  • Use fresh gnocchi for the best texture and flavor, but frozen gnocchi will work if thawed properly.
  • For a lighter version, substitute heavy cream with half-and-half or a cream alternative.
  • To make it gluten-free, ensure the gnocchi is made without wheat or substitute with gluten-free gnocchi.
  • Garnishing with fresh basil adds a nice aroma and fresh flavor contrast.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated gently on the stovetop.
