Dough
- 1/2 cup (120 ml) warm water (110°F)
- 1/2 cup (120 ml) whole milk, room temperature
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup + 1 tablespoon (65 g) granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon kosher salt
- 4 cups (500 g) all-purpose flour
- 5 tablespoons (70 g) unsalted butter, softened
- 1/2 cup (80 g) confetti sprinkles (confetti quins)
Filling
- 1/3 cup (75 g) unsalted butter, softened
- 1/3 cup (65 g) granulated sugar
- 1/3 cup (70 g) dark brown sugar, packed
- 1 tablespoon (8 g) ground cinnamon
- Pinch (1/8 teaspoon) kosher salt
Frosting
- 4 oz (113 g) cream cheese, softened
- 1/4 cup (56 g) unsalted butter, softened
- 1 1/2 cups (180 g) powdered sugar, sifted
- Pinch (1/8 teaspoon) kosher salt
- 2 tablespoons (20 g) additional confetti sprinkles for garnish
- Activate Yeast: In a bowl, combine warm water and milk. Sprinkle yeast and 1 tablespoon sugar over the top. Let sit for 5–7 minutes until foamy, indicating the yeast is active.
- Mix Wet Ingredients: In a stand mixer bowl, whisk together the yeast mixture, remaining sugar, egg, and egg yolk until combined.
- Combine Dry Ingredients: In a separate bowl, mix the flour and salt together. Add 2 cups of this flour mixture to the wet ingredients and mix with a dough hook attachment.
- Knead Dough: Add another 1 cup of flour and knead at low speed. Gradually add softened butter 1 tablespoon at a time while kneading.
- Finish Kneading: Add the remaining flour and continue kneading until the dough is smooth and pulls away from the bowl, about 5–7 minutes total.
- Add Sprinkles: Mix in the confetti sprinkles evenly throughout the dough, distributing the colorful bits.
- First Rise: Transfer dough to a lightly greased bowl, cover, and let it rise for 1 hour or until doubled in size.
- Roll Dough: Punch down the dough and roll out on a lightly floured surface into a 20 x 14-inch rectangle.
- Add Filling: Spread 1/3 cup softened butter evenly over the dough. In a small bowl, combine granulated sugar, brown sugar, cinnamon, and salt and sprinkle this mixture evenly over the buttered dough, gently pressing it in.
- Form Rolls: Roll the dough tightly from the long side into a log shape. Slice into 12 equal rolls.
- Second Rise: Place rolls in a greased 9 x 12-inch baking pan. Cover and let rise for 30–45 minutes until puffy.
- Preheat Oven: Preheat oven to 350°F (175°C).
- Bake: Bake rolls for 30–35 minutes until golden brown and the internal temperature reaches 185°F.
- Cool: Let the rolls cool for 5 minutes to settle before frosting.
- Prepare Frosting: Beat cream cheese and butter together until smooth and creamy. Gradually add powdered sugar and salt, mixing until fully incorporated.
- Frost and Garnish: Spread the cream cheese frosting over the warm rolls and garnish with additional confetti sprinkles before serving.
Notes
- Use flat confetti sprinkles (confetti quins) for best marbled effect; avoid nonpareils or jimmies as they may not blend well in dough.
- Do not overheat milk or water to avoid killing the yeast; maintain the temperature at about 110°F.
- For overnight prep, refrigerate shaped rolls and allow them to come to room temperature before baking to complete the rise.
- Unfrosted rolls can be frozen for up to 2 months; thaw and reheat before frosting.
- To reheat rolls without drying, microwave with a cup of water nearby to keep them moist and prevent becoming gummy.
