Filling

  • 1/3 cup (75 g) unsalted butter, softened
  • 1/3 cup (65 g) granulated sugar
  • 1/3 cup (70 g) dark brown sugar, packed
  • 1 tablespoon (8 g) ground cinnamon
  • Pinch (1/8 teaspoon) kosher salt

Frosting

  • 4 oz (113 g) cream cheese, softened
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 1/2 cups (180 g) powdered sugar, sifted
  • Pinch (1/8 teaspoon) kosher salt
  • 2 tablespoons (20 g) additional confetti sprinkles for garnish

Instructions

  1. Activate Yeast: In a bowl, combine warm water and milk. Sprinkle yeast and 1 tablespoon sugar over the top. Let sit for 5–7 minutes until foamy, indicating the yeast is active.
  2. Mix Wet Ingredients: In a stand mixer bowl, whisk together the yeast mixture, remaining sugar, egg, and egg yolk until combined.
  3. Combine Dry Ingredients: In a separate bowl, mix the flour and salt together. Add 2 cups of this flour mixture to the wet ingredients and mix with a dough hook attachment.
  4. Knead Dough: Add another 1 cup of flour and knead at low speed. Gradually add softened butter 1 tablespoon at a time while kneading.
  5. Finish Kneading: Add the remaining flour and continue kneading until the dough is smooth and pulls away from the bowl, about 5–7 minutes total.
  6. Add Sprinkles: Mix in the confetti sprinkles evenly throughout the dough, distributing the colorful bits.
  7. First Rise: Transfer dough to a lightly greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  8. Roll Dough: Punch down the dough and roll out on a lightly floured surface into a 20 x 14-inch rectangle.
  9. Add Filling: Spread 1/3 cup softened butter evenly over the dough. In a small bowl, combine granulated sugar, brown sugar, cinnamon, and salt and sprinkle this mixture evenly over the buttered dough, gently pressing it in.
  10. Form Rolls: Roll the dough tightly from the long side into a log shape. Slice into 12 equal rolls.
