Frozen Greek Yogurt Bark with Berries & Nuts

- 2 cups plain Greek yogurt (full fat or 2%)
- 2–3 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
- 2 tablespoons chia seeds
- 1/4 cup chopped pistachios
- Fresh mint leaves (optional, for garnish)
- Line a baking sheet with parchment paper.
- In a bowl, stir together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Pour the yogurt mixture onto the prepared baking sheet and spread it into an even layer about 1/4 inch thick.
- Evenly sprinkle the sliced strawberries, blueberries, chia seeds, and chopped pistachios over the yogurt layer.
- Gently press the toppings into the yogurt with the back of a spoon.
- Freeze for at least 3 hours, or until completely firm.
- Once frozen, break or cut into shards.
- Store in a sealed container in the freezer and enjoy immediately out of the freezer to prevent melting.
Notes
- Use parchment paper to prevent sticking.
- Feel free to substitute or add other fruits and nuts.
- Eat immediately from the freezer as it melts quickly.
