Ingredients

Scale

Filling

  • 2 tablespoons butter
  • 5 cups diced peeled Granny Smith apples (about 4 medium)
  • 3 tablespoons sugar (divided from total 4 tablespoons)
  • 1¼ teaspoons ground cinnamon (divided)
  • Pinch of ground nutmeg
  • Pinch of salt
  • 1 tablespoon all-purpose flour
  • 2 teaspoons lemon juice

Assembly and Frying

  • 8 egg roll wrappers
  • 4 teaspoons coconut oil
  • 1 tablespoon sugar (remaining from total 4 tablespoons)
  • ½ teaspoon ground cinnamon (remaining from total 1¼ teaspoons)

Instructions

  1. Cook the Apple Filling: Heat butter in a large skillet over medium-high heat until it starts to brown lightly. Add diced apples, 3 tablespoons sugar, ¾ teaspoon cinnamon, nutmeg, and salt. Cook while stirring occasionally until the apples are softened, about 6 to 8 minutes. Sprinkle in the flour and cook for 1 more minute to thicken. Remove from heat and stir in lemon juice to brighten the flavors.
  2. Roll the Apple Pie Rolls: Place one egg roll wrapper on a clean surface with a corner pointing towards you. Lightly brush the edges with water to help seal. Spoon about 1/3 cup of the apple filling into the center. Fold the left and right corners over the filling, then fold the bottom corner up and roll tightly towards the top corner, ensuring a tight seal. Repeat with remaining wrappers and filling. Clean and dry the skillet used for cooking.
  3. Prepare Cinnamon Sugar: In a shallow dish, combine the remaining 1 tablespoon sugar with ½ teaspoon cinnamon and set aside near the stove for coating after frying.
  4. Fry the Rolls: Heat coconut oil in the skillet over medium heat until shimmering. Place the apple pie rolls in the oil and fry, turning frequently to brown evenly on all sides. This should take about 5 to 7 minutes. Once golden brown and crispy, remove the rolls and drain briefly on paper towels if necessary.
  5. Coat with Cinnamon Sugar: While still warm, dredge the fried rolls in the prepared cinnamon sugar mixture to coat thoroughly. Serve immediately for the best texture and flavor.

Notes

  • Make Ahead Tip: Prepare through rolling step, individually wrap and freeze for up to 6 months. Thaw overnight in the refrigerator before frying and coating with cinnamon sugar.
  • Use Granny Smith apples for tartness and firm texture that holds up well during cooking.
  • Adjust sugar in filling and coating according to sweetness preference.
