Ingredients

Scale

Roll Ups

  • 1 lb thinly sliced roast beef
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus Dipping Sauce

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the roll ups.
  2. Assemble Roll Ups: Lay the flour tortillas flat on a work surface. Evenly distribute the thinly sliced roast beef and shredded mozzarella or provolone cheese over each tortilla, ensuring an even layer.
  3. Roll Tortillas: Carefully roll each tortilla tightly from the bottom up, folding in the sides as you go to keep the filling secure inside the roll.
  4. Prepare for Baking: Brush the outside of each rolled tortilla with melted butter. Then sprinkle garlic powder, onion powder, and dried parsley evenly over the roll ups for extra flavor and color.
  5. Bake Roll Ups: Place the prepared roll ups on the parchment-lined baking sheet. Bake in the preheated oven for 12 to 15 minutes, until the tortillas are golden brown and the cheese inside is melted and gooey.
  6. Make Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper in a saucepan over medium heat. Bring it to a simmer and cook for 5 to 7 minutes to enhance flavors.
  7. Slice and Serve: Once baked, let the roll ups cool slightly. Slice each roll into bite-sized pieces and serve warm alongside the au jus dipping sauce for dipping.

Notes

  • Use thinly sliced roast beef for best texture and flavor.
  • You can substitute mozzarella with provolone for a slightly different cheesy taste.
  • Adjust seasoning in the au jus to suit your taste preference and salt levels.
  • For extra crispiness, broil the roll ups for 1-2 minutes after baking, watching carefully to avoid burning.
  • These roll ups make a great appetizer or party finger food.
