Ingredients

Scale

Chocolate Mixture

  • 1/2 cup chopped chocolate pieces
  • 1 cup vanilla-flavored non-dairy Greek yogurt
  • 1/2 cup sweetener of choice (such as white, brown, or sugar-free sugar)

Dry Ingredients

  • 3/4 cup regular or gluten-free all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda

Other

  • 1/2 cup preferred milk (like unsweetened almond milk)
  • 1 cup optional chocolate chips

Instructions

  1. Prepare the Baking Pan and Preheat the Oven: Preheat your oven to 180°C (350°F). Line an 8 x 8-inch baking pan with parchment paper, letting the paper overhang the edges for easy removal later. Set the pan aside.
  2. Melt Chocolate and Combine Wet Ingredients: In a microwave-safe bowl, melt the 1/2 cup chopped chocolate pieces in short bursts, stirring occasionally until smooth. Let it cool slightly for 1-2 minutes. Add 1 cup vanilla-flavored non-dairy Greek yogurt and 1/2 cup sweetener to the melted chocolate. Whisk until smooth and well combined. Transfer this mixture to a large mixing bowl.
  3. Mix Dry Ingredients and Combine with Wet Ingredients: Add 3/4 cup all-purpose flour, 1/2 cup cocoa powder, and 1/2 teaspoon baking soda to the chocolate mixture. Stir gently until just combined, taking care not to overmix to avoid tough brownies. Pour in 1/2 cup preferred milk and mix thoroughly until the batter is smooth. If desired, fold in 1 cup of chocolate chips evenly.
  4. Bake the Brownies: Pour the batter into the prepared pan and smooth the surface with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  5. Cool the Brownies: Remove the pan from the oven and let the brownies cool for about 10 minutes in the pan. Use the parchment overhang to lift them out and transfer to a wire rack to cool completely before slicing into squares. Enjoy your guilt-free, fudgy brownies!

Notes

  • You can use white, brown, or sugar-free sweeteners according to your dietary preference or needs.
  • Substitute dairy Greek yogurt with any non-dairy Greek yogurt for a lactose-free version.
  • Using gluten-free flour makes the recipe gluten-free without compromising texture.
  • Ensure not to overmix the batter to keep the brownies tender and fudgy.
  • Optional chocolate chips add extra chocolatey bites but can be omitted for a simpler version.
