Ingredients

Scale

Chicken and Coating

  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1 cup cornstarch
  • 1/2 tsp black pepper
  • 1/2 tbsp salt
  • 3 garlic cloves, pressed
  • 2 eggs
  • 1/2 cup oil for frying

Sweet and Sour Sauce

  • 1/2 cup sugar
  • 1 tbsp soy sauce
  • 1/3 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1 tsp garlic parsley salt

Instructions

  1. Coat the Chicken: Place the chicken pieces in a large mixing bowl. Add the cornstarch, black pepper, salt, and pressed garlic cloves. Stir everything together until each chicken piece is evenly coated with the dry ingredients.
  2. Prepare to Fry: Preheat the oil in a large skillet over medium heat. In a separate bowl, whisk the eggs. Dip each coated chicken piece into the egg mixture, ensuring it’s fully covered.
  3. Fry the Chicken: Fry the egg-coated chicken pieces in the hot oil until each side turns golden brown and crispy. Once fried, transfer the chicken pieces to a baking dish, arranging them in a single layer.
  4. Make the Sweet and Sour Sauce: In a small bowl, whisk together the sugar, soy sauce, ketchup, apple cider vinegar, and garlic parsley salt until the sugar dissolves and the sauce is smooth.
  5. Pour Sauce and Bake: Pour the prepared sauce evenly over the fried chicken in the baking dish. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
  6. Flip and Coat: During baking, flip the chicken pieces every 10 minutes to ensure they are fully coated with the sauce and bake evenly.
  7. Serve: Once done, remove from the oven and serve hot, ideally over steamed white rice or alongside your favorite noodle dish.

Notes

  • For crispier chicken, avoid overcrowding the skillet while frying.
  • Adjust sugar and vinegar in the sauce to customize the sweetness and tanginess to your preference.
  • Use fresh garlic for the best flavor in the coating.
  • This dish pairs perfectly with steamed jasmine rice or fried rice.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
