  • 57 tbsp soy sauce, adjust according to desired taste
  • 1.5 tsp dark soy sauce (optional for color)
  • 23 tbsp corn starch
  • 13 tbsp sugar, maple syrup, or other liquid sweetener, adjust according to desired sweetness
  • 2 tbsp rice vinegar, white vinegar, or lemon juice, adjust according to desired sourness
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce (optional for spice)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced (optional)

For Serving

  • Chopped scallions for topping

Instructions

  1. Prepare the Sauce: Mix all the sauce ingredients together until well incorporated, adjusting sweetness, saltiness, sourness, and spice to your preference. Set aside.
  2. Cook the Noodles: Boil water in a small pot over high heat. Add ramen or your chosen noodles and cook until just underdone—about 2-3 minutes less than package instructions so they retain a chewy bite. Drain and optionally rinse with cold water to stop cooking and remove excess starch. Set aside.
  3. Sauté the Vegetables/Tofu: Heat a pan over medium-high heat with a little oil. Sauté your choice of tofu, vegetables, or mushrooms for a few minutes until cooked to your liking.
  4. Simmer the Sauce: Stir the sauce to ensure no starch settles at the bottom, then pour it into the pan with the sautéed ingredients. Let it simmer over medium heat for 2-3 minutes, stirring continuously until thickened.
  5. Add and Coat the Noodles: Add the cooked noodles into the pan and stir well to coat them evenly with the sauce.
  6. Finish Cooking: Cook the noodles over medium-high heat for about 3 minutes, allowing them to absorb the sauce as it thickens further. Adjust seasoning with more soy sauce, sweetener, or pepper as needed.
