  • 20 to 25 garlic cloves, whole

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) to ensure it’s hot and ready when you start roasting the chicken.
  2. Prepare the Roasting Pan: Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil for easy cleanup and safe roasting.
  3. Prepare the Flavor Base: Spread the thinly sliced shallots evenly on the bottom of the foil-lined casserole dish. Add half of the whole garlic cloves over the shallots. Sprinkle fresh thyme and rosemary evenly across the bottom.
  4. Season the Chicken: Place the chicken pieces skin side up on top of the shallots and garlic. Drizzle generously with avocado or olive oil on both sides of each piece. Season thoroughly with sea salt and ground black pepper.
  5. Add Herbs and Remaining Garlic: Sprinkle more fresh thyme over the chicken pieces and distribute the remaining garlic cloves around the chicken in the pan.
  6. Add Chicken Broth: Pour the chicken broth carefully along the edges of the pan to avoid washing off the seasoning from the chicken.
  7. Roast the Chicken: Roast uncovered in the preheated oven at 400°F (204°C) for approximately 1 hour, or until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
  8. Optional Broiling for Extra Crispiness: For extra crispy and darker skin, turn on the oven broiler for the last 5 to 7 minutes of roasting. Watch carefully to prevent burning.
  9. Rest and Serve: Remove the chicken from the oven. Use a spoon to drizzle the pan sauce over the chicken to keep it moist and flavorful before serving.
