These Easy No-Bake Biscoff Cookie Pumpkin Truffles are a delicious fall-inspired treat combining the warm spices of pumpkin puree with the crunch of biscoff cookies and a smooth white chocolate coating. Cookie Base

  • 250 g package of biscoff cookies

Truffle Mixture

  • 1/2 cup pure pumpkin puree
  • 2 tbsp pure pumpkin puree
  • 2 tbsp maple syrup
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger

Coating

  • 1 1/2 cups (10 oz) white chocolate chips

Instructions

  1. Pulse Cookies: Pulse biscoff cookies in the food processor until they form a fine crumb. Set aside 1 tablespoon of crumbs for later use in decoration.
  2. Mix Ingredients: Add the remaining cookie crumbs to a large mixing bowl along with the pumpkin puree, maple syrup, cinnamon, nutmeg, and ground ginger. Mix thoroughly until all ingredients combine. The mixture will be crumbly at first but will soften as you continue mixing.
  3. Shape Truffles: Scoop approximately one heaping tablespoon of the mixture per truffle onto a parchment-lined baking sheet. Place the tray in the freezer and chill for 45 minutes to firm up.
  4. Melt Chocolate: Melt the white chocolate chips in the microwave using 20 to 30-second increments, stirring after each interval to prevent burning. Allow the melted chocolate to rest for a few minutes to thicken slightly before dipping.
  5. Dip and Decorate: Dip each chilled truffle into the melted chocolate, allowing excess chocolate to drip back onto the parchment. For variety, you can drizzle chocolate over some truffles instead of fully coating them. While the chocolate is still wet, sprinkle the reserved cookie crumbs over the top to garnish. Return the truffles to the fridge for 30 minutes to set completely.
  6. Store Properly: Store the truffles in a parchment-lined airtight container in the refrigerator for up to 7 days. They can be left out for a few hours at room temperature when serving.

Notes

  • For an elegant touch, decorate the tops of the truffles with gold sprinkles before the white chocolate sets.
  • If preferred, substitute the individual spices with 1 1/4 teaspoons of pumpkin pie spice.
  • Without a food processor, crush the biscoff cookies finely by placing them in a large ziplock bag and rolling with a rolling pin.
