  • 1 8.5 oz. box Jiffy cornbread mix
  • 1 large egg
  • 1/3 cup milk

Instructions

  1. Brown Ground Beef: In a 10-inch cast-iron or oven-proof skillet, heat a little olive oil over medium-high heat. Add the ground beef and brown it for 3-4 minutes, breaking it up with a wooden spoon. For finer meat texture, use a potato masher in the last minute of cooking.
  2. Add Vegetables and Seasoning: Stir in diced onion, red pepper, corn kernels, green chilies, and taco seasoning. Cook for an additional 3-4 minutes until the vegetables are softened.
  3. Mix in Sauce and Cheese: Pour in the enchilada sauce and stir until combined. Add half of the shredded cheddar cheese and mix well. Taste and add salt if necessary.
  4. Prepare Cornbread Batter: Preheat the oven to 375°F. In a mixing bowl, whisk together the Jiffy cornbread mix, egg, and milk until smooth with no lumps.
  5. Assemble the Pie: Pour the cornbread batter evenly over the meat mixture in the skillet. Use a spatula or butter knife to gently push the batter to the edges and smooth the surface. Sprinkle the remaining cheddar cheese on top.
  6. Bake: Place the skillet in the oven and bake for 20-25 minutes until the cornbread topping is golden brown and cooked through, and the filling is bubbly.
