Ingredients

Scale

Crust

  • 3 cups graham cracker crumbs (about 22 full sheet graham crackers)
  • 3/4 cup unsalted butter, melted
  • 6 tablespoons granulated sugar

Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup diced strawberries
  • 2 1/2 cups whole strawberries

Instructions

  1. Prepare the Pan: Spray a 9 x 13 inch pan with non-stick spray and set it aside for later use.
  2. Make the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press about half of this mixture firmly into the bottom of the prepared pan; reserve the remaining crumbs for topping.
  3. Puree Strawberries: Place the whole strawberries into a blender and puree for 1-2 minutes until smooth. Set aside this strawberry puree.
  4. Whip the Cream: In a medium bowl, beat the heavy whipping cream starting at low speed for 1 minute, then increase to high speed, and continue beating until stiff peaks form (about 4 minutes). Set aside the whipped cream.
  5. Make the Cream Cheese Mixture: In a large bowl, beat the softened cream cheese and powdered sugar on low speed until creamy. Add the sweetened condensed milk, vanilla extract, and strawberry puree, then beat until all ingredients are well combined.
  6. Combine Whipped Cream: Fold the whipped cream into the cream cheese mixture gently until well incorporated.
  7. Fold in Diced Strawberries: Gently fold the diced strawberries into the mixture to distribute evenly.
  8. Assemble the Dessert: Spread the strawberry cream mixture evenly over the graham cracker crust in the pan.
  9. Add the Topping: Sprinkle the reserved graham cracker crumbs over the top of the dessert evenly.
  10. Freeze the Dessert: Cover the pan with plastic wrap and freeze for several hours, preferably 4-6 hours or overnight, until the dessert is firm and set.
  11. Serve: Cut into squares and serve chilled for a refreshing frozen strawberry treat.

Notes

  • Make sure the cream cheese is fully softened for a smooth filling without lumps.
  • Whipping the cream to stiff peaks is essential for the right texture of the dessert.
  • Diced strawberries add lovely texture to the creamy filling, but you can omit them for a smoother dessert if preferred.
  • Allow sufficient freezing time to ensure the dessert holds its shape when served.
  • Store leftovers covered in the freezer for up to a week.
